Homemade Butterscotch Apple Dumplings – A Crafty Kids Cook Recipe
Nothing says fall like a bushel of juicy red apples and the smell of baking from the kitchen. The apple harvest falls just in time for September 17th which is National Apple Dumpling Day. Although the origins of this tasty holiday are unclear, the joy in celebrating it will be evident when your children bite into the fluffy pastry and warm, apple filling.
The following recipe was concocted with children involved in the ingredient picking process, hence the inclusion of scrumptious butterscotch chips. If your family would prefer a healthier version, try substituting the chips with golden raisins. As always, apple dumplings are best served warm with a scoop of creamy vanilla ice cream. Enjoy!

Homemade Butterscotch Apple Dumplings
Serves: 8
Prep Time with Children Helping: 30 minutes
Bake Time: 12-15 minutes
Ingredients:
3 Macintosh apples
1/2 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1 cup butterscotch chips
1 tube of refrigerated croissant dough
Directions:
1. Wash, peel, core and slice the apples into bite sized chunks.
2. Place the apple chunks into a large bowl and add the other ingredients.
3. Stir to coat.
4. Preheat oven to 375 degrees.
5. Roll out the croissant dough. Cut into eight squares.
6. Spoon the apple mixture evenly onto the eight squares.
7. Fold up the opposite corners and gently pinch the sides closed. Children may enjoy folding theirs up slightly differently. As long as the apples are on the dough and somewhat loosely covered the dumpling will be fine.
8. Place the dumplings in a glass baking dish.
9. Bake at 375 degrees for 12-15 minutes or until lightly golden brown and fluffy.

Would you like to read a story to the children while your dumplings bake? Some suggested children's books that go along with the apple theme include the following titles:
Apples by Gail Gibbons (Holiday House, 2001)
Apples by Jacqueline Farmer (Charlesbridge Publishers, 2007)
How to Make an Apple Pie and See the World by Marjorie Priceman (Random House, 1996)
Apple Fractions by Jerry Pallotta (Scholastic, 2003)
